  • 1 3 4 cups 265g plain flour
  • 1 teaspoon dried yeast
  • 1 teaspoon caster sugar
  • 1 teaspoon cooking salt
  • 2 3 cup 160ml warm water
  • 1 2 cup 125ml extra virgin olive oil
  • semolina to dust
  • 2 desiree potatoes very thinly sliced
  • 1 garlic clove thinly sliced
  • 10 sprigs fresh thyme
  • baby rocket leaves to serve
  • shaved parmesan to serve

  • preheat oven to 230u00b0c combine the flour yeast sugar and salt in a medium bowl add the water and half the oil and stir to combine turn the dough out onto a lightly floured surface and knead for 10 minutes or until smooth and elastic place in a clean lightly greased bowl and cover with a damp tea towel set aside in a warm draught free place for 30 minutes or until the dough doubles in size
  • turn the dough out onto a surface dusted with semolina and knead for 1 minutes or until dough is knocked back to its original size divide dough into 2 even portions
  • sprinkle an oven tray with extra semolina use a rolling pin to roll 1 portion out to a 3mm thick rough disc place on the prepared tray arrange half the potato garlic and thyme over the bread season with salt and pepper repeat with remaining dough potato garlic and thyme drizzle with remaining olive oil
  • bake in preheated oven for 15 20 minutes or until golden brown and potato is tender remove from oven serve warm or at room temperature sprinkled with baby rocket leaves and shaved parmesan if desired
