  • 600g chopped cauliflower
  • 1 egg lightly beaten
  • 20 g 1 4 cup finely grated cheddar cheese

  • 300g chicken breast fillet thinly sliced
  • 1 2 teaspoon flakes of dried chilli
  • 2 cloves of garlic crushed
  • 1 large zucchini peeled cut into ribbons
  • 125 g roasted red bell pepper not in oil sliced
  • 60g feta cheese crumbled
  • 250g of cherry tomatoes cut in half
  • 100g baby spinach
  • 1 tablespoon of white balsamic vinegar

  • preheat the oven to 220c 200c fan forced place the cauliflower in 2 batches in a food processor and process until finely chopped transfer to a microwave dish cover and cook in microwave for 4 minutes or until tender transfer to a colander let cool completely and then press with a spoon to remove excess liquid
  • line 2 pizza trays with baking paper combine the cauliflower egg and cheddar cheese in a large bowl divide the mixture in half and transfer to the prepared trays press each into a circle about 20 cm 3mm thick spray lightly with olive oil bake in the oven for 15 minutes or until the edges are golden brown
  • meanwhile heat 1 teaspoon oil in a large non stick frying pan over high heat add the chicken chilli and half the garlic cook stirring for 2 minutes or until golden brown
  • mix the remaining oil and garlic in a small bowl brush cauliflower databases with the oil mixture then top with zucchini peppers chicken mix feta cheese and tomatoes bake swapping trays halfway through for 10 minutes or until golden brown place the spinach in a bowl drizzle with balsamic and serve with the pizza
